摘　　要：食用菌产业是山东农业的优势产业之一,但由于食用菌采收期比较集中,食用菌产业在贮藏、保鲜及物流运输方面存在诸多问题.总结了现阶段山东省食用菌存在的一些问题和影响食用菌商品品质的主要原因,针对这些原因,从物流方面和保鲜原理方面提出了一些解决办法,并探讨了今后食用菌的物流保鲜趋势.Edible fungi industry is one of the advantageous industries in Shandong. However,due to the concentrated of edible fungi harvesting period,the edible fungi industry has many problems in storage,preservation and logistics transportation. In this paper,the problems and the reasons of edible fungi existing at the present stage in Shandong were summarized and analyzed,and the development of edible fungi logistics preservation was prospected.
