高剂量辐照对银杏果仁营养成分的影响

摘　　要：本文对高剂量辐照后银杏的营养成分、微量元素以及感官指标进行了研究。结果表明 :银杏经高剂量 ( 1 0～ 50kGy)辐照后粗脂肪含量、1 7种氨基酸、微量元素等与对照无显著差异 ;可溶性总糖提高了 1 7%和 84% ,碳水化合物提高了 6 6%～2 5 3 % ;维生素C含量减少了 2 7 7%～ 50 3 % ;色泽、硬度和气味随剂量增加明显减弱。 3The nutrition content,microelement and sense index of the irradiated ginkgo biloba were studied.The results showed that there were no difference in the content of crud fat and microelement between treatment with high dosage irradiation and contrast.The total soluble sugar and carbohydrate in the ginkgo biloba after high dosage irradiation increased 84% and 6 6%～25 3% respectively,but the vitamin C decreased 27 7%～50 3%.The index of color,hardness and odour decreased as the irradiation dosage increased.
