摘　　要：马铃薯粉丝是以马铃薯淀粉为主要原料,经自熟式粉丝机加工制成的一种风味特殊、烹调简便的现代食品之一。本生产工艺与传统加工工艺相比较具有生产效率高,中间环节不制芡、不蒸煮、不下水,营养和风味均保持较好等优点,具有较好的市场前景。Potato vermicelli is a kind of easily made modem food with special flavor.It is made from potato starch,and produced by vermicelli machine which can cook it.Comaprde with con- ventional method,this way of production is high in efficiency,because there are no intermediate links of making starch solution,cooking and watering.It's also perfect in taste and rich in nut- rition,and would be warmly welcomed in markets.
