摘  要:采用基于方波伏安法的装置采集大米电化学信号,对电化学信号进行小波去噪后,对电化学信号和大米食味因子进行相关性分析。结果显示:Au、Pd、Cu、Pb、Cd、In、Ni、Fe、W、Ti的电化学信号均同大米直链淀粉含量负相关,同支链淀粉含量和支直比正相关;而Al电极在某些电位点处同直链淀粉含量正相关,某些电位点处呈负相关,对支链淀粉和支直比情况类似。Electrochemical signals from rice were collected by square-wave voltammetric device.After removing the noise of electrochemical signal with wavelet denoising method,correlation analysis between electrochemical signal and rice flavor factor was studied.Results showed that the denoised electrochemical signals collected by Au,Pd,Cu,Pb,Cd,In,Ni,Fe,W,Ti were negative correlation with rice amylose content,and were positive correlation with amylopectin and the ratio of amylopectin to amylose.The denoised electrochemical signals collected by Al were negative correlation with rice amylose at some potential points and were positive correlation at some other potential points.It was the same result as the amylopectin and the ratio of amylopectin to amylase.
