摘  要:选用3/5盎司规格的罗非鱼片为原料,比较气调(CO2:O2:N2=6:1:3)、气调+臭氧水(0.6mg/L、5 min)、气调+低温等离子体(70 kV、60 s)处理组间的保鲜效果。通过测定鱼片电导率、质构参量、脂肪氧化值(TBA)、挥发性盐基氮(TVB-N)、pH、色差值、细菌总数、气体含量等指标,分析低温等离子体处理对4℃条件下气调罗非鱼片品质的影响。结果表明,随着贮藏期的延长,鱼片各项指标均出现显著性变化(P<0.05)。其中处理组对色差的影响较小,等离子体处理可延缓弹性骤变、酸碱度的上升速度及挥发性盐基氮的快速增长,并改变气体含量及成分。虽然在一定程度上促进了鱼片的氧化反应,但同时抑制了微生物的生长繁殖,因此冷藏罗非鱼片贮藏期最长;臭氧水与气调包装组比空气包装组有较为明显的保鲜效果,而单一气调包装贮藏期最短。The use of factory ounces(3/5) tilapia fillets was used to investigate the effects of different bacteriostatic treatments on the quality of tilapia fillets(4 °C). Air packaging as control, air-filled packaging(CO2:O2:N2=6:1:3), MAP+ozone water(0.6 mg/L, 5 min) sterilization, MAP+plasma sterilization(70 kV, 60 s) as treatment group. The conductivity, texture, oxidation value(TBA), volatile base nitrogen(TVB-N), pH value, color difference value, gas content and the like of the fish fillet were measured. The results showed that there were significant differences in the indicators of fish fillets with the increase of storage period(P<0.05). The treatment group had less influence on the color difference. Plasma treatment changed the original gas content and composition, although the fish fillets were promoted. The oxidation reaction, but inhibited the growth and reproduction of microorganisms, the effect of ozone disinfection water and modified atmosphere packaging group on the quality of fish fillets compared with the air packaging group has a relatively obvious preservation effect. Therefore, the longest storage period of temperate tilapia fillets is the combination of air-conditioning and plasma sterilization, followed by the ozone group, and the storage period of single modified atmosphere packaging is the shortest.
