高压脉冲电场技术在实验教学中的应用

摘　　要：将高压脉冲电场萃取技术应用到食品科学专业课"功能性食品"实验教学中,采用福林酚法测定蓝莓中多酚含量,并结合响应面分析法优选多酚类化合物的最佳提取工艺,确定工艺条件为料液比35∶1、乙醇浓度70%、p H值2. 7、电场场强40 k V/cm、脉冲数6,所得总酚得率为36. 4%。该方法在室温下进行,绿色环保,能有效保护功能成分的活性,且操作简便、有机溶剂使用量少。将该实验用于本科实验教学中,增加了教学实验的开放性、综合性和研究性,有利于开拓学生创新性思维、提高分析解决问题的能力以及提升环保意识。The pulsed electric field( PEF) extraction technology was applied in the experimental teaching of functional food. The Fulin phenol method was used to determine the content of polyphenols in blueberry. The result showed that,the most yield rate is 36. 4% of total polyphenols under the following conditions the ratio of material and liquid is 35: 1,ethanol concentration 70%,pH 2. 7,the electric field strength 40 k V/cm and pulse number 6. The method is simple and convenient to operate,and less in use of organic solvents. The activity of the functional component can be effectively protected,and the openness,comprehensiveness and research of the teaching experiment are increased,which is beneficial to develop students’ innovative thinking,improve the ability of analyzing and solving problems,and is green environmental awareness.
