摘 要:目的了解中国淡水产品抗生素残留问题的现状。方法按照国家标准、农业部公告、行业标准等对2016-2018年食品安全监督抽检的8775批次淡水鱼、淡水虾、淡水蟹中的孔雀石绿、氯霉素、恩诺沙星等抗生素含量进行检测,并按照国家标准或部门公告判定结果是否合格。结果2016-2018年淡水蟹类、淡水鱼和淡水虾的合格率分别为98.08%、97.77%和96.65%,不同品种的合格率差异无统计学意义(x^2=2.5661);各类抗生素3年的总体合格率均在98.5%以上;除2017年不同价格淡水虾的合格率差异有统计学意义(x^2=8.5973,P<0.05)外,其余不同区域、不同价格、不同售卖场所的产品间合格率差异无统计学意义。结论中国抗生素残留问题已经得到有效改善。Objective To investigate the status of antibiotics residue in aquatic products in China.Methods According to Chinese national standards,the announcement of the Ministry of Agriculture and the industry standards,the contents of malachite green,chloramphenicol,enrofloxacin and other antibiotics were determined in 8775 batches of freshwater fish,freshwater shrimp and freshwater crab sampled for food safety supervision from 2016 to 2018.The results were qualified according to the corresponding national criteria or department announcements.Results The qualified rate of freshwater crab,freshwater fishes and freshwater shrimp from 2016 to 2018 was 98.08%,97.77%and 96.65%,respectively.There was no significant difference in the qualified rate among samples of different species(x^2=2.5661).The overall qualified rate of all kinds of antibiotics in three years was over 98.5%.Except for the qualified rate of freshwater shrimp at different prices in 2017(x^2=8.5973,P<0.05),there was no significant difference in the qualified rate among products from different areas,prices and selling sites.Conclusion The situation of antibiotics residue in aquatic products in China has been improved.
