摘  要:采用气质联用(GC-MS)直接进样技术,ZB-WAX极性毛细管柱分离,分析勾兑酒与酿造酒化学成分的差异。不经过提取、分离,无需试剂,前处理过程简单,就能快速分析酒中化学成分,判定酒的品质。结果从勾兑酒与酿造酒中,分别鉴定出6种和27种挥发性成分,相对含量分别占总离子峰的99.98%、99.97%,具有5个相同的化合物,均包含乙醇、丙醇、丁酸乙酯、己酸乙酯、乳酸乙酯。The chemical constituents of blending liquor and brewing liquor were analyzed by gas chromatography-mass spectrometry(GC-MS)with the use of ZB-WAX polar capillary column separation.Without extraction,separation and reagent,the pre-treatment processes were simple,the chemical composition of wine can be rapidly analyzed and the quality of liquor can be determined.6 and 27 kinds of volatile components were identified from the blended and brewing liquor.The relative content of these volatile components accounted for 99.98%and 99.97%of the total ion peaks,respectively.They had five identical compounds,including ethanol,propanol,ethyl butyrate,ethyl caproate and ethyl lactate.
