摘  要:马铃薯是世界上第四大粮食作物,其采后物流销售过程中易发生绿变,严重影响其商品价值,造成巨大的经济损失。马铃薯采后绿变的发生主要与块茎内叶绿体的生成和叶绿素的合成有关,并受品种、成熟度、大小以及光照条件等多种因素的影响。本文对马铃薯绿变的发生机制及影响因素进行了综述,同时对其控制措施进行了系统总结,以期为今后研究更为安全有效的绿变抑制技术提供参考。As the fourth largest food crop in the world,potato is prone to greening during post-harvest logistics and sales,which seriously affecting its commodity value and causing huge economic losses.The occurrence of post-harvest greening of potato is mainly related to the formation of chloroplasts and the synthesis of chlorophyll in the tuber,and affected by various factors such as variety,maturity,size and illumination conditions.In this paper,the occurrence mechanism and influencing factors of potato greening are reviewed.Also,the greening inhibition methods are systematically summarized.This can provide reference for future research on safer and more effective greening inhibition methods.
