摘　　要：以浓香型大曲白酒生产工艺为例,通过与其它类型白酒的对比分析了在原料、工艺等方面的异同,同时也针对浓香型白酒在酿造中的一些操作环节及关键点提出了一些见解,以期提高我国的白酒酿造企业酿造浓香型大曲酒的品质同时简化其工艺流程,降低生产成本和增加收益,为我国的浓香型白酒走向世界打下一个坚实的基础。Taking the production technology of Luzhou-flavor Daqu liquor as an example,this paper compares and analyzes the similarities and differences in raw materials and processes between Luzhou-flavor Daqu liquor and other types of liquor.At the same time,this paper also puts forward some opinions on some operation links and key points of Luzhou-flavor liquor brewing,in order to improve the quality of Luzhou-flavor Daqu liquor brewed by liquor brewing enterprises in our country and simplify its technological process at the same time.Reduce the production cost and increase the income,for our country Luzhou-flavor liquor to go to the world to lay a solid foundation.
