摘  要:白酒酒糟是粮食作物经发酵生产白酒后余下的残渣,含有大量的淀粉、蛋白质等营养物质。传统的酒糟处理主要是作为生产动物饲料及有机肥,附加值较低。若能利用酒糟生产丁醇不仅可以降低丁醇生产成本,得到高附加值的产物丁醇,还可以实现酒糟废弃物的综合利用,与优化后的生产丁醇的合成培养基相比,酒糟中氨基酸态氮等物质基本满足微生物生长需求,但是还原糖含量偏低,采用液化酶、糖化酶水解白酒糟,优化提高水解液中还原糖浓度,得到最佳的水解条件为:液化条件为料液比1∶1,pH为6.0,加液化酶10U/g酒糟,沸水浴1h;糖化则在液化结束后,调pH至4.0,60℃恒温水浴,加酶量为150U/g酒糟,时间为2h。酒糟水解液中的还原糖浓度从24g/L提高到50g/L,比初始还原糖浓度提高了108%。Distillers'grain is the main by-product of the Chinese liquor industry and contains large amount of starch,protein and other nutrients.Traditionally,distillers'grain is used to produce animal feed and organic fertilizer,nevertheless the added values are low.Comprehensive utilization of distillers'grain to produce butanol can decline the materials cost of butanol production.Compared with the synthetic medium for producing butanol,amino acid nitrogen in distillers'grain can meet the needs of microbial growth while reducing sugar concentration is lower.Therefore,amylase and glucoamylase were used to hydrolyze the distillers'grain and improve the reducing sugar concentration in this paper.Distillers'grain was mixed with tap water at a ratio of 1∶1(w/v)and held at 100℃for 1h after 10U/g high-temperature amylase addition and pH adjustment to 6.0.Then the saccharification operation was conducted at 60℃for 2h after 150 U/g glucoamylase addition and pH adjustment to 4.0.As a result,the reducing sugar concentration increased from 24g/L to 50g/L,improving by 108%.
