摘 要:从食品加工工业中常用的超高压处理设备出发,分别从结构特点和工作方式2方面对现阶段常用超高压加工设备进行探讨。在分析中国超高压食品加工设备现状的基础上,总结目前食品行业超高压加工的存在问题,并对超高压食品加工的前景进行展望。Ultra-high pressure processing technology was an emerging processing technology in food processing industry. The excellent characteristics of processed food had been quickly favored by the majority of consumers. The characteristics of ultra-high pressure food processing equipment were summarized. From the ultra-high pressure food processing equipment in the food industry, two aspects of the structural characteristics and working mode of the current ultra-high pressure food processing equipment were discussed. The present situation of ultrahigh pressure food processing equipment in China was analyzed, the defects of ultrahigh pressure food processing in China were pointed out, and the prospect of ultra-high pressure food processing was prospected.
