摘  要:单环刺螠是分布于中国沿海的唯一一种无管螠目动物,具有较高的营养价值和经济价值。文章综述了单环刺螠的活性成分,包括纤溶酶、速激肽、抗菌肽、抗硫化物及多糖等;介绍了单环刺螠可食用的体壁肌的营养成分如氨基酸等以及废弃内脏的成分组成,对其在针对调味品领域的产品开发进行阐述。单环刺螠因其较高的经济价值在未来食品药品行业极具开发潜力,既可以大力开发深加工产品如海鲜调味料,还可以提取其体内的活性成分开展营养学、免疫学和药理学方面的研究,用于研发保健品和抗炎、抗菌的药物。Urechis unicellularis is the only animal belonging to Xenopneusta and distributing in the coast of China,which has high nutritional and economic value.This paper reviews the active components of Urechis unicellularis,including fibrinolytic enzymes,tachykinins,antimicrobial peptides,antisulfides and polysaccharides,and introduces the nutritional components of edible parietal muscles such as amino acids and the components of waste viscera.This paper expounds the product development in the field of seasoning.The Urechis unicellularis has great development potential in food and drug industry.It can be finely processed as seafood seasoning.Scientists can also extract active ingredients from it to carry out research in nutrition,immunology and pharmacology,which are able to produce promising health products and anti-inflammatory,antibacterial drugs.
