摘 要:本研究对分离甘南地区的嗜热链球菌MN-ZLW-002进行了体外益生功能和安全性分析。结果显示,MN-ZLW-002对p H2.0及pH3.0的人工胃液耐受性较好,但对0.3%胆盐条件耐受性较弱;菌株MN-ZLW-002对胆固醇的降解率为42.66%±2.11%,对氯霉素、庆大霉素、链霉素、四环素、万古霉素、卡那霉素、青霉素、红霉素和克林霉素均敏感,且MN-ZLW-002急性经口毒性属无毒。综合上述结果,MN-ZLW-002具有良好的模拟胃液耐受性、较强的胆固醇降解能力,且安全无毒,可作为功能型发酵食品原料进行开发,具有巨大的商业价值。In this study,the probiotic property in vitro and safety of Streptococcus thermophilus MN-ZLW-002 isolated from Gannan area were analyzed.The results showed that MN-ZLW-002 was well tolerated to artificial gastric juice at p H2.0 and pH3.0,but weakly tolerated to 0.3%bile salt.The cholesterol degradation rate of strain MN-ZLW-002 was 42.66%±2.11%.MN-ZLW-002 was sensitive to chloramphenicol,gentamicin,streptomycin,tetracycline,vancomycin,kanamycin,penicillin,erythromycin and clindamycin.Meanwhile,MN-ZLW-002 acute transoral toxicity was nontoxic.In a conclusion,MN-ZLW-002 is not only non-toxic and has a good tolerance to simulated gastric juice,but also has a strong ability to degrade cholesterol.It can be developed as a functional fermented food raw material and has a great commercial value.
