摘  要:研究了自然干燥和热风干燥处理后籼稻在陈化过程中爆腰率、发芽率和发芽势、出糙率、整精米率、种子生活力和脂肪酸值等指标的变化情况,并进行感官评价分析。结果表明:随储藏时间的增加,热风干燥与自然干燥相比,爆腰率较高,出糙率、整精米率较低;在种子活性方面表现出更低的发芽率和发芽势、种子生活力;另外,脂肪酸值超出国家安全储粮标准,感官评价分值相应较低。与自然干燥相比,热风干燥籼稻储藏过程品质劣变较严重,自然晒干籼稻更适合储藏。In this experiment,the changes in indicators such as crackle rate,germination rate and germination potential,roughness rate,polished rice rate,seed viability,and fatty acid value of indica rice during aging after natural drying and hot air drying were studied,and the senses were measured.The test results show that with the increase of storage time,compared with natural drying,hot air drying has a higher crackle rate,lower roughness rate,and lower polished rice rate;it shows lower germination rate and germination potential,and seed viability.In addition,the fatty acid value exceeded the national safe grain storage standard,and the sensory evaluation score was correspondingly lower.Compared with natural drying,the quality degradation of indica rice by hot air drying is more serious,and natural drying indica rice is more suitable for storage.
