摘  要:[目的]确定黄芪与大豆共发酵制备一种具有高纤溶活性黄芪豆豉的最优发酵工艺。[方法]以黄芪水提液浸泡大豆作为发酵基质,以淡豆豉来源的4株枯草芽孢杆菌作为发酵菌株,以纤溶酶活性为考察指标,通过对发酵菌株的筛选、黄芪提取液的浓度和比例以及发酵时间的考察,筛选最优发酵工艺。[结果]黄芪豆豉的最优发酵工艺:黄芪水提液浓度为75 mg/mL,黄芪水提液与大豆的比例为1∶1(mL∶g),最优发酵菌株为DCT-1,于37℃发酵36 h。[结论]黄芪与大豆共发酵制备黄芪豆豉,既提高了豆豉的纤溶酶活性,又兼具黄芪的补气功效,提供了一种具有益气活血作用的食疗产品。[Objective]Astragalus membranaceus and soybean were co-fermented to prepare fermented soya beans with high fibrinolytic activity,and confirming the optimal fermentation process.[Method]Soybean was soaked in astragalus aqueous extract as the fermentation substrate,and 4 strains of Bacillus subtilis separated from Sojae Semen Praepartum were used as the fermentation strains,with fibrinolytic activity as the index,and the optimal fermentation technology was selected through the screening of strains,the concentration and proportion of astragalus extract and the fermentation time.[Result]The results showed that the optimal fermentation process of Astragalus membranaceus-fermented soya beans was as follows:astragalus water extract concentration was 75 mg/mL,the proportion of astragalus water extract and soybean was 1∶1(mL∶g),DCT-1 was the optimal fermentation strain,and fermented at 37℃for 36 h.[Conculsion]The co-fermentation of astragalus and soybean not only improved the fibrinolytic activity of fermented soya beans,but also had the effect of supplementing breath of astragalus,providing a kind of food therapy product with the function of Yiqi Huoxue.
