摘 要:目的了解北京市某区学校食堂的午餐食物供应情况,为学生营养改善工作提供科学依据。方法抽选2所小学和1所中学,采用称重法对学校食堂的午餐食物和营养素供应情况进行调查,结果与《学生餐营养指南》(WS/T 554-2017)进行比较。结果 3所学校学生谷薯类(127.3%~150.8%)、蔬菜类(92.0%~118.0%)供应较充足,肉类超标严重(318.2%~550.0%),蛋类(46.7%~50.0%)、鱼虾类(0~54.5%)供应不足,水果类和奶类供应最低,均为0。钙(28.2%~40.3%)、膳食纤维(37.5%~53.8%)供应不足,钠超标严重(218.8%~646.4%)。中学膳食结构上更有"高能量密度"倾向。结论学校食物供应需要加强配餐的合理性和科学性,优化食物供应结构,提高学生餐营养质量;食品安全监管部门应予以配合;依据小学至中学膳食结构的差异,有针对性地调整学生营养改善策略,提高工作成效。Objective To evaluate the food supply in schools,and provide references to student nutrition improvement program.Methods The study included two primary schools and one middle school.Food and nutrient supplies were investigated by weighed food records and compared with the reference value in Nutrition Guidelines of School Meals(WS/T 554—2017).Results Compared with the recommendation,the supply of grains(127.3%-150.8%) and vegetables(92.0%-118.0%)was sufficience,but the supply of meat(318.2%-550.0%) was exceeded,while the supply of eggs(46.7%-50.0%) and aquatic product(0-54.5%) was insufficient,and fruits and dairy were the lowest(0.0%).Calcium(28.2%-40.3%) and dietary fiber(37.5%-53.8%) were insufficient,and sodium(218.8%-646.4%) was exceeded.There was a tendency of high energy density in dietary structure of middle school.Conclusions School canteens should strengthen the scientificly and rationality on food supply,optimize the food structure and improve the quality of nutrition in meals.,Department of food safety supervision should also involve in.In addition,according to the difference of dietary structure requirements between primary and middle schools,targeted adjustment of students’ nutrition improvement strategy is necessary to improve working effectiveness.
