摘 要:以莲房为原料,原花青素的提取率为考察指标,比较了有机溶剂浸提法、双酶辅助提取法、超声波辅助提取法3种方法的提取效果。选择提取效果较好的双酶辅助法进行工艺优化,并对其抗氧化性进行分析。结果表明,双酶辅助法提取莲房原花青素的最佳工艺条件为酶解时间60 min、酶解温度55℃、酶解pH 6、果胶酶质量与纤维素酶质量比1:1。在此工艺条件下,莲房原花青素的提取率为4.36%。结果表明,莲房原花青素对DPPH自由基有较强的清除活性,对铁离子有较强的还原能力。The extraction rate of procyanidins from receptaculum nelumbinis was taken as the index to compare the extraction effects of three methods,including organic solvent extraction,double enzymes assisted extraction and ultrasonic assisted extraction.The double enzyme assisted method with better extraction effect was selected for process optimization,and its anti-oxidation was analyzed.The results showed that the optimum extraction conditions of procyanidins in receptaculum nelumbinis were:enzymatic hydrolysis time of 60 mins,enzymatic hydrolysis temperature of 55℃,enzymatic hydrolysis pH 6,the weight of pectinase:the weight of cellulase 1∶1.Under these conditions,the extraction rate of procyanidins was 4.36%.The results showed that the procyanidins had strong scavenging activity to DPPH free radicals and reducing ability to iron ions.
