摘  要:草鱼鱼鳞中含有丰富的胶原蛋白,可作为胶原蛋白的来源物质,但胶原蛋白与鱼鳞中的灰分相互黏附,阻碍了胶原蛋白的提取,因此在提取胶原蛋白前,需要将灰分除去。以新鲜的草鱼鱼鳞为试验对象,通过单因素试验和正交试验,采用柠檬酸法研究鱼鳞脱灰的最佳工艺条件。结果表明,用4%的柠檬酸以1∶14的料液比处理6 h可以最大程度地将灰分除去,此时灰分的去除率为99.63%。灰分的残留量符合工业生产加工的需求(低于2%)。Grass carp fish scales are rich in collagen,which can be used as a source of collagen.However,collagen and ash in fish scales adhere to each other,which hinders the extraction of collagen.Therefore,it is necessary to remove ash before collagen extraction.In this study,the fresh grass carp scales were used as the test object.Through single factor test and orthogonal test,the citric acid method was used to study the best process conditions for descaling of fish scales.The results showed that the treatment with 4%citric acid at a material-to-liquid ratio of 1∶14 for 6 h could remove the ash to the maximum extent,and the ash removal rate was 99.63%.The residual amount of ash meets the needs of industrial production and processing(less than 2%).
