摘 要:为商洛茶业发展提供参考,以龙井43、安吉白茶、中茶108、乌牛早、陕茶1号茶树为材料,观察各茶树品种的生长特性,对不同茶树品种制成的秦岭泉茗扁平茶的主要理化成分进行测定与感官品质审评,分析不同品种的适制性。结果表明:5个茶树品种萌芽期集中在2月下旬至3月中旬,1芽1叶初展期集中在3月中下旬至4月初,5种不同茶树品种的酚氨比均小于8,均适制绿茶;感官品质总分超过平均值的有乌牛早、龙井43、安吉白茶和中茶108,乌牛早汤色最好、滋味最优,龙井43香气最佳。5个茶树品种均适宜在商洛茶区栽植,其中乌牛早和龙井43最适制特级秦岭泉茗扁平茶,可作为商洛茶区当前主推的无性系茶树良种。In order to provide a reference for tea industry in Shangluo,the growth characteristics of tea varieties(Longjing 43,Anji white tea,Zhongcha 108,Wuniuzao and Shancha 1)are observed,and then the main physical-chemical component and sensory quality of Qinling Quanming Flat Tea processed with different tea varieties are determined and evaluated to analyze the suitability of different tea varieties.Result:The germination stage of five tested tea variesties is concentrated from late Feb.to mid Mar.The intial stage of one bud with one leaf is concentrated from mid-to-late Mar.to early Apr.100-bud weight of one bud with one leaf is 7.6-8.2 g.The phenol-ammonia ratio of five tea varieties is less than 8,which is suitable for processing green tea.The total score of sensory quality in Wuniuzao,Longjing 43,Anji white tea and Zhongcha 108 exceeds the average value.Wuniuzao has the best liquor color and taste,while the aroma of Longjing 43 is the best.Five tested tea varieties are suitable for cultivating in Shangluo teagrowing area.Wuniuzao and Longjing 43 are the optimal varieties for processing premium Qingling Quanming Flat Tea,which can be used as the main clonal tea varieties in Shangluo tea-growing area.
