摘　　要：【目的】分析和评价市售南极磷虾油产品营养品质,为南极磷虾油的质量监管提供技术参考。【方法】对市售18个南极磷虾油产品的功能性成分(4个指标)、挥发性风味物质(14个指标)和色泽(3个指标)进行检测分析,建立基于主成分分析(PCA)算法的南极磷虾油品质分析模型。【结果】通过PCA算法对功能性成分、挥发性风味物质和色泽3类指标进行数据降维至每类1个主成分指标,3个主成分指标的贡献率分别为93.23%、94.32%和95.49%,均能较好地代表对应多个指标的特征。建立了市售南极磷虾油产品品质的分析和对比模型,该模型包括三部分,分别为基于现有18个样品的基础模型、现有18个样品的品质指标基础数据库和实现数据库相关及PCA相关的Python程序模块。由模型分析可知,样品2和样品7的功能性成分指标相对于其余样品较为突出,18个样品的色泽和挥发性风味物质指标能够在模型中得到显著区分。【结论】建立的市售南极磷虾油产品品质分析和对比模型能够实现对南极磷虾油产品品质进行分析并与市售同类产品进行对比,且可在分析新样本时,通过基于Python的程序语言模块根据新样本对模型自身进行优化。【Objective】To analyze and evaluate the nutritional quality of Antarctic krill oil products,and provide technical reference for the production supervision of Antarctic krill oil.【Method】The functional components(4 indicators),volatile flavor compounds(14 indicators)and color(3 indicators)of 18 Antarctic krill oil products were detected and analyzed,and a principal component analysis(PCA)based quality analysis model was established.【Result】The three sets of indicators were reduced from multiple indicators to one principal component indicator through the PCA algorithm.The contribution rates of these three principal components were 93.23%,94.32%and 95.49%,which could represent the characteristics of multiple indicators of the corresponding group.The model that analyzed and compared the quality of Antarctic krill oil products on market has been established.The model consisted of three parts:the basic model based on the existing 18 samples,the quality index basic database of the existing 18 samples,and the Python program module to realize database correlation and PCA correlation.According to the model analysis,the functional component indexes of sample 2 and sample 7 were more prominent than those of the other samples,and the color and volatile matter indexes of 18 samples could be distinguished significantly in the model.【Conclusion】The model that analyzes and compares the quality of Antarctic krill oil products on market can analyze the quality of Antarctic krill oil products and compare with the same products on the market.When analyzing new samples,the model can be optimized by the program language module based on Python according to the new samples.
