摘  要:目的了解湖州市现榨果汁微生物污染状况,为卫生监管、食源性疾病防治提供参考。方法2016年-2017年,在每年6月-8月随机采集大中型酒店、餐厅、饮品店等餐饮环节制作的现榨果汁190份,对所有样品均开展菌落总数和金黄色葡萄球菌检测,其中有40份样品增加沙门菌和单核细胞增生李斯特菌检测。结果190份现榨果汁中不合格率为46.32%(88/190),其中有87份为菌落总数不合格,1份为菌落总数和金黄色葡萄球菌不合格。致病菌检出率为2.63%(5/190),均为金黄色葡萄球菌。菌落总数计数为1 cfu/ml^3.2×10^6cfu/ml,中位数为7.5×10^4cfu/ml,对数均数为(4.69±1.27)cfu/ml。相比于餐厅,大中型酒店和饮品店采集的现榨果汁的不合格率(P<0.05)和菌落总数计数均较高(P<0.001)。结论湖州市现榨果汁微生物污染不容乐观,主要原因为细菌总数超标,但引发食源性疾病风险尚不高。Objective To understand the microbial contamination status of freshly prepared fruit juice in catering in Huzhou,and to provide reference for health supervision and foodborne disease prevention and control.Methods During 2016 to 2017,190 samples of freshly prepared fruit juice from large and medium-sized hotels,restaurants,beverage stores and the like were randomly collected during June-August each year.Total viable counts(TVC)and S.aureus were detected for all samples,of which 40 samples additional increased Salmonella and Listeria monocytogenes detection.Results The total unqualified rate was 46.32%(88/190),of which 87 samples were unqualified for TVC and 1 sample unqualified for TVC and S.aureus.The detection rate of pathogenic bacteria was 2.63%(5/190),all belonging to S.aureus.TVC ranged from 1 cfu/ml to 3.2×10^6 cfu/ml,with a median of 7.5×10^4 cfu/ml and a logarithmic mean of(4.69±1.27)cfu/ml.Compared to restaurants,the unqualified rate(P<0.05)and TVC were higher(P<0.001)from large and medium-sized hotels and beverage stores.Conclusion The microbial contamination of the freshly prepared fruit juices in Huzhou City is not optimistic.The main reason is that TVC exceed the standard,but the risk of foodborne diseases is not high.
