摘  要:以玉米淀粉为原料,旨在开发出一种具有良好乳化性和乳化稳定性的颗粒状冷水可溶辛烯基琥珀酸淀粉酯。先利用乙醇-碱法处理,然后用辛烯基琥珀酸酐(OSA)进行酯化,探讨酯化时间、酯化温度、酯化pH、无水乙醇稀释倍数4个因素对产品取代度和反应效率的影响。利用Design-Expert,优化酯化反应条件。经验证得出制备高取代度颗粒状冷水可溶亲脂性淀粉的最佳工艺条件为酯化时间4.5 h、酯化温度31.9℃、酯化pH为8.3、无水乙醇稀释倍数为2.4。所得产品的取代度为0.0192。With maize starch as raw material,a kind of granular cold-water-soluble octenyl succinic anhydride modified starch with good emulsifying property and emulsifying stability was prepared.First of all,granular cold-water-soluble maize starch was prepared by alcoholic-alkaline treatment,then granular cold-water-soluble maize starch was esterified with octenyl succinic anhydride(OSA).The effects of reaction time,reaction temperature,pH of reaction system,OSA dilution times on the DS(degree of substitution)and reaction efficiency of product were discussed.Design-Expert was used to optimze reaction condition.Through the validation test,the suitable parameters for the preparation of granular cold-water-soluble lipophilic maize starch were determined as follows:reaction time 4.5 h,reaction temperature 31.9℃,pH of reaction system 8.3,and dilution of OSA 2.4 times with alcohol.Under this condition,the DS of product reached to 0.0192.
