摘　　要：社会各界人士对食物提出了严格要求,更加重视绿色健康饮食,而食用菌就是符合该理念的食物之一。具体而言,食用菌无论是在口感方面,还是在药用方面都极其突出,食用菌中涵盖较多的活性分子,其是食用菌实现保健功能的根本,由此可见,对食用菌的营养价值及其保健功能进行深入分析具有较高的价值。People from all walks of life have put forward more stringent requirements for food,and more attention is paid to green and healthy drinking,and edible fungi is one of the new dietary structures.In particular,edible fungi are extremely prominent in terms of taste and medicinal value.Edible fungi contain many active molecules,and it is the basis for edible fungi to achieve health functions.Therefore,it is particularly important to analyze the nutritional value and health functions of edible fungi.
