摘  要:琼脂在食品工业中具有重要的应用价值,将琼脂溶化温度降低至90 ℃以下有利于琼脂在乳制品中的应用。文章探究了加热溶胶后高温干燥对琼脂性质的影响,并探索琼脂与常用水溶性胶体复配后经加热溶胶、高温干燥制备低温溶解琼脂复配胶体的技术。研究发现琼脂在热处理时间1.5 h、热处理温度120 ℃条件下进行热处理并经高温烘干后其溶化温度最低。琼脂与卡拉胶、海藻酸钠、魔芋胶复配后经加热溶胶、高温干燥后最低溶化温度分别可达83.3、76.7、80.1 ℃。随着其他胶体量的增加,复配胶体的其他理化性质呈现差异性变化。试验结果说明琼脂与其他胶体复配后通过加热溶胶及高温干燥处理,可以制备得到溶化温度低于90 ℃的琼脂复配胶体,为琼脂在乳制品中的应用提供了技术参考。Agar has important application value in food industry.It is beneficial to the application of agar in dairy products by reducing the dissolution temperature of agar to below 90 ℃.The effect of high temperature drying on the properties of agar was studied,and the technology of preparing low temperature dissolving agar composite colloid by hot sol high temperature drying method was explored.It was found that the melting temperature of agar was the lowest after heat treatment at 1.5 h,120 ℃ and high temperature drying.After heating sol and high temperature drying the lowest melting temperature of agar and carrageenan,sodium alginate,konjac gum complex can reach 83.3 ℃,76.7 ℃ and 80.1 ℃,respectively.With the increase of the content of other colloids,the other physical and chemical properties of the composite colloid also changed in varying degrees.The results showed that agar composite colloid with solution temperature lower than 90 ℃ could be prepared by sol heating and high temperature drying,which provided technical reference for the application of agar in dairy products.
