摘 要:该研究探讨不同年份普洱生茶体外抗氧化活性与生化成分的相关性,研究其水提物的抗氧化活性和生化成分的含量变化。结果表明普洱生茶水提物对DPPH自由基、超氧阴离子自由基、羟基自由基清除能力和总抗氧化能力均表现出显著的效果,且量效呈线性关系,线性相关系数R2值均大于0.95。抗氧化活性与茶多酚和氨基酸呈极显著相关性(p<0.01),与儿茶素总量呈显著相关性(p<0.05),其次是咖啡碱和水浸出物。普洱生茶的体外抗氧化活性随储存时间推移呈下降趋势;且体外抗氧化活性与生化成分之间都呈现正相关的关系。In order to investigate the correlation between antioxidant activity and biochemical components of Pu-erh tea in different years,the antioxidant activity of water extract and the content change of biochemical components were studied.VC showed significant effects on scavenging activities of DPPH free radicals,superoxide free radicals,hydroxyl free radicals and total antioxidant capacity,and the dosimetric effect was linear,and the linear correlation coefficient R2 values were all greater than 0.95.Antioxidant activity was significantly correlated with tea polyphenols and amino acids(p<0.01),and catechins(p<0.05),followed by caffeine and water extract.The antioxidant effect of non-fermented Pu-erh tea in vitro showed downtrend over time.There was positive correlation between antioxidant activity and biochemical components in vitro.
