摘  要:目的了解泉州市市售食品镉污染水平,为开展食品镉污染风险评估提供依据。方法用分层随机抽样法,采集(购买)2013-2019年市售食品11类1267份样品,用石墨炉原子吸收法或电感耦合等离子体质谱法检测食品中镉含量。结果1267份样品中镉的检出率为70.2%(890/1267),超标率为6.5%(54/834);检测镉的中位数为0.015 mg/kg(ND~13.0 mg/kg);镉超标率最高的是水产品(12.8%),其次是茶叶(8.2%)和蔬菜及食用菌(2.9%);干/湿姬松茸及藻类检出率均达100.0%、大米制品检出率达93.9%。结论泉州市市售食品镉总检出率虽高(70.0%),但总超标率低(6.5%)。建议加强市场监管,以保障市售食品安全;此外,建议加快完善姬松茸、大米制品及藻类等食品镉限量指标制定工作。Objective To investigate the level of cadmium contamination in the market food products in Quanzhou City for the risk assessment of cadmium contamination in foods.Methods Totally 1267 samples of 11 kinds of market food products were collected from 2013 to 2019 by stratified random sampling method.The cadmium contents of food products were detected by graphite furnace atomic absorption spectrometry or inductively coupled plasma mass spectrometry method.Results The detection rate of cadmium of 1267 food samples was 70.2%(890/1267)and the over standard rate was 6.5%(54/834).The median of cadmium contents in the food samples was 0.015 mg/kg(ND-13.0 mg/kg).The highest over standard rate was aquatic products(12.8%),followed by tea(8.2%),vegetables and edible fungi(2.9%).The detection rates of dry/wet matsutake and algae were 100.0%,and the detection rate of rice products was 93.9%.Conclusion Although the total detection rate of cadmium in market food products in Quanzhou City is at higher level,but the total over standard rate is at lower level.It is suggested to strengthen market supervision to ensure the safety of the market food products.In addition,it is suggested to speed up and perfect the work of setting cadmium limit index in food such as trichiatus blazei,rice products and algae.
