摘 要:以苹果多酚(Apple polyphenols,AP)和壳聚糖(Chitosan,CS)为原料,制备可食性复合膜,研究苹果多酚/壳聚糖复合膜(AP/CS)的理化性质及其对冷却牛肉肌原纤维蛋白氧化特性的影响。结果表明:随着AP含量的增加,AP/CS复合膜的厚度、密度及DPPH自由基清除率显著提高,膜的水分含量及溶解度有所降低。通过扫描电镜可以观察到,复合膜中的AP和CS表现出很好的相容性,但随着AP含量的增加,膜表面出现较多小孔,较为粗糙。同时,分别采用保鲜膜(PE)及20%AP/CS复合膜包装冷却牛肉并于4℃下贮藏7 d,在第0、1、3、5、7天取样进行相关指标测定。结果表明:相较于PE包装组,AP/CS复合膜包装组显著抑制肌原纤维蛋白的羰基含量、表面疏水性含量的上升,减缓了蛋白总巯基含量的下降,在一定程度上抑制了牛肉蛋白的氧化。综上所述,AP/CS复合膜在抑制冷却肉蛋白氧化等方面具有一定的应用潜力。An edible composite membrane was prepared using apple polyphenols(AP)and chitosan(CS)as raw materials.The physicochemical properties of the composite membrane and its effects on the oxidation properties of cooled beef myofibrils were studied.The results show that with the increase of the content of the AP,AP/CS composite membrane thickness,density,and significantly higher DPPH free radical clearance rate,membrane water content and solubility decreases,by scanning electron microscopy(SEM)can be observed that AP in composite membrane and CS showed good compatibility,but with the increase of the content of the AP membrane surface appear more holes,more rough.At the same time,adopt the cling film(PE)and 20%AP/CS composite film packaging cooling beef and under 4℃storage 7 d,at 0 d,1 d,3 d,5 d,7 d sampling to determine relevant indicators,the results show that:compared with PE packaging group,AP/CS composite film packaging group significant inhibition of the myofibril protein carbonyl content and surface hydrophobicity levels rise and slowed the decrease in the total protein content of thiol to a certain extent,inhibit the oxidation of beef protein.In conclusion,AP/CS composite membrane has certain application potential in cooling meat protein oxidation and other aspects.
