摘　　要：为进一步探明食品工艺学在线课程在爱课程平台的运行机制,基于选修人数1 800余人,经过1期的理论与实践,结合课程平台基本课程数据演变路径,从课程建设体系、学习过程、学习产出等角度合理分析和评价课程数据背后的运行机制。结果表明,课程在运行过程中存在波动现象,表现在选课人数的分段集中;单元测试和作业完成情况数据显示学生学习积极性呈现逐渐下降趋势;在线视频学习呈现高开低走,后期又呈现上升和趋于平稳的状态,教学课件的学习次数基本不变,随堂讨论次数呈现由高到低又上升的现象。试验结果为建设一流在线食品类专业课程提供参考依据。In order to further investigate the performing mechanism of the online course Food Technology at the i-course platform, based on the number of elective more than 1 800 people. After a period of practice, combined with the evolution path of the basic course data on the platform, it is proposed to reasonably analyze and evaluate the operation mechanism behind the course data from the perspectives of the course construction system, learning process, learning output, etc. The results show that there are fluctuations in the course operation, which are manifested in the concentration of course participants;the unit tests and homework completion data show that students’ enthusiasm for learning is on a gradual decline;online video learning has shown a high start and a low trend, which later shows a rise and a steady state;the learning of teaching materials basically remains unchanged, and the in-class discussions show a high to low and rising phenomenon. A reference for the future construction of best online food courses is provided.
