摘  要:作为极具中国民族特色的传统酿造酒,黄酒以稻谷、麦曲、酒药等为原料,经传统发酵工艺酿造而成,含有包括氨基酸、多肽、多糖、低聚糖、酯类物质等在内的多种生物活性物质。酿造过程中,在酒曲微生物作用下,酿造体系产生种类丰富的黄酒低聚糖,具有独特的功效。黄酒低聚糖是由3~10个单糖通过糖苷键连接形成的直链或支链的低度聚合糖类,具有缓解机体便秘、治疗肥胖、治疗肠道炎症等功能。目前主要探究了黄酒低聚糖的含量检测,尚未对其肠道调节功能进行探究。该文对黄酒酿造工艺、原料稻米与小麦酶解工艺、酒曲微生物代谢、低聚糖检测方法等最新研究进行了全面的分析,详细论述了黄酒低聚糖的来源、种类与检测现状,同时论述了膳食低聚糖对便秘、肠道炎症及肥胖的作用机理,旨在为黄酒低聚糖后续功能研究提供理论支撑。As a traditional brewing alcoholic drink with Chinese national characteristics,Huangjiu(Chinese rice wine)is brewed by traditional fermentation technology with rice,wheat Qu and Jiuyao,etc.as raw materials,which contains a variety of bioactive substances including amino acids,poly peptides,polysaccharides,oligosaccharides,esters and so on.During the brewing process,the brewing system could produce a rich variety of Huangjiu oligosaccharides with unique effects under the action of Jiuqu microorganisms.Huangjiu oligosaccharides are straight or branched low-degree polymerized sugars formed by 3-10 monosaccharides connected by glycoside bonds,which have functions of relieving constipation,treating obesity and intestinal inflammatory and so on.At present,the detection of oligosaccharides content in Huangjiu has been mainly discussed,but its intestinal regulatory function has not been explored.The latest research on Huangjiu brewing technology,raw material rice and wheat enzymatic hydrolysis technology,Jiuqu microbial metabolism,and oligosaccharide detection methods were comprehensively analyzed in this article,and the sources,types and detection status of Huangjiu oligosaccharides were discussed in detail.At the same time,the effect mechanism of dietary oligosaccharides on constipation,intestinal inflammation and obesity was discussed,aimed to provide theoretical support for the follow-up research of Huangjiu oligosaccharides.
