摘　　要：目的 了解2019年-2020年河南省市售谷类食品中7种真菌毒素的污染状况。方法 于2019年-2020年,在河南省17个省辖市采集玉米、玉米面、大米、小麦粉共计221份,使用超高效液相色谱-三重四级杆串联质谱方法检测了样品中黄曲霉毒素(AFB1、AFB2)、伏马菌毒素(FB1、FB2、FB3)、玉米赤霉烯酮(ZEN)和脱氧雪腐镰刀菌烯醇(DON)7种真菌毒素,并对检测数据进行统计学分析。结果 221份谷类样品中真菌毒素的总检出率为53. 4%,无超标样品。2019年谷类食品中检出率最高的是FB3(35. 2%),最低的是ZEN(15. 6%);2020年检出率最高的是FB1(11. 1%),最低的是AFB1(3. 0%)。2019年样品中7种真菌毒素的检出率均高于2020年(P <0. 05)。结论 河南省17个省辖市采集的谷类食品存在真菌毒素污染情况,但整体污染水平较低,无超标样品。Objective To investigate the contamination status of 7 mycotoxins in cereals in Henan Province from 2019 to 2020.Methods Totally,221 grain samples of com,com flour,rice and wheat flour were collected in 17 cities of Henan Province from 2019 to 2020,and 7 mycotoxins including aflatoxin(AFB_(1),AFB_(2)),fumonitoxin(FB_(1),FB_(2),FB_(3)),zearalenone(ZEN)and deoxynivalenol(DON)were detected by ultra-high performance liquid chromatography-triple quadrupole tandem mass spectrometry.Results The total detection rate of mycotoxins in 221 cereal samples was 53.4%,without samples exceeding the hygienic standards.The highest detection rate in 2019 was 35.2%for FB3 and the lowest was 15.6% for ZEN.And the highest detection rates in 2020 was 11.1%for FB_(1),the lowest was 3.0%for AFB_(1).The detection rate of 7 mycotoxins in the samples in 2019 was higher than that in 2020(P<0.05).Conclusion The cereals collected from 17 cities in Henan Province were contaminated by mycotoxins,but the contamination was at a low level,and no over-standard samples were observed.
