摘  要:在实验室条件下,以大米为原料,8种纯种麸皮根霉小曲(Q3031、XGGM、M101、YG5-G、SZGM、F1、F2、甘肃2)及安琪小曲为糖化发酵剂,分别进行小曲酒半固态发酵研究,以期提高小曲酒的出酒率及酒体品质。本试验条件下的结果表明,小曲F2的酒精度比安琪小曲高0.4%vol,出酒量比安琪小曲高52 g,乙酸乙酯比安琪小曲高16.94 mg/L。该研究可推动小曲白酒产业的持续健康发展,为有效提高小曲白酒出酒率和酒的品质提供参考。In order to improve the liquor yield and quality of Xiaoqu Baijiu,8 kinds of pure Rhizopus Xiaoqu(Q3031,XGGM,M101,YG5-G,SZGM,F1,F2,Gansu 2)and Angel Xiaoqu were used as saccharification and fermentation agents to study their semi-solid fermentation performance under laboratory conditions.The results showed that,compared with Angel Xiaoqu,the alcohol by volume of Xiaoqu F2 was 0.4%vol higher,the liquor yield was 52 g higher,and the ethyl acetate content was 16.94 mg/L higher.The research can promote the sustained and healthy development of Xiaoqu Baijiu industry,and can provide reference for improving the liquor yield and quality of Xiaoqu Baijiu.
