摘　　要：乳酸杆菌是人体肠道中重要的有益菌群,能够起到维持人体肠道微生态平衡的作用。文章综述了常见乳酸杆菌对肠道微生态的调节作用,并从微生物之间的相互作用、增强肠道上皮的屏障功能和免疫调节作用3个方面综述了乳酸杆菌调节肠道微生态的作用机制,探讨了乳酸杆菌作为益生菌在乳制品中的应用及存在的问题,以期为乳酸杆菌的应用提供理论依据。Lactobacillus is an important beneficial flora in the human intestinal tract,which can play a role in maintaining the balance of human intestinal microecology.The paper summarizes the regulating action of common Lactobacillus on the intestinal microecology,reviewes the mechanism of Lactobacillus regulating intestinal microecology from three aspects:interaction between microorganisms,enhancement of intestinal epithelial barrier function,and immune regulation,and discusses the application and the existing problems of Lactobacillus as probiotics in dairy products,in order to provide a theoretical basis for the application of Lactobacillus.
