摘  要:分析研究2018—2020年江苏、浙江、上海三省市餐饮渠道抽样的食品、原料、餐具质量情况及存在问题。通过收集整理苏浙沪三省市市场监督管理局2018—2020年度公示信息,进行分析和汇总。结果表明:上海市3年不合格率有波动,2019年监督合格率最高;江苏省连续3年抽查批次数逐年递减,合格率基本持平;浙江省3年抽样批次数浮动较大,不合格率浮动也较大。上海市受地域限制及人口数量较少的原因省级监督批次数较少,合格率总体表现较好,主要不合格集中在餐饮具;江苏省监督批次数位列第二,总体表现尚可,餐饮具不合格率较高,油炸面制品不合格较多;浙江省监督批次数最多,总体表现尚可,海蜇制品为主要不合格来源。从近3年的不合格可见,小餐饮企业的食品安全尚需努力,食品添加剂滥用问题较为突出,需要监管部门加强教育监督,加强餐饮行业与监管部门协同发展,共建食品安全。Analyze and study the quality of food,raw materials,and tableware sampled from catering channels in Shanghai,Jiangsu,and Zhejiang from 2018 to 2020 and the existing problems.By collecting and sorting out the 2018—2020 public information of the market supervision administrations of the three provinces and cities of Jiangsu,Zhejiang and Shanghai,analysis and summarization were conducted.The results show that the three-year failure rate in Shanghai fluctuates,and the quality of supervision in 2019 is the best;Jiangsu Province has reduced the intensity of random inspections year by year for three consecutive years,and the quality is basically the same;Zhejiang’s three-year sampling number fluctuates greatly,as same as the failure rate fluctuates.Shanghai is limited by the region and the population is small.The amount of provincial supervision is relatively small,and the overall performance is relatively good.The main disqualifications are concentrated in the tableware;The amount of supervision in Jiangsu Province ranks second,the overall performance is acceptable,the failure rate of tableware is relatively high,and there are many failures of fried flour products;Zhejiang has the largest amount of supervision,and the overall performance is acceptable.Jellyfish products are the main source of unqualified.It can be seen from the disqualifications in the past three years that the food safety of small catering companies still needs to improve,and the overlapping problem of food additives has expanded.It is necessary for the supervision department to strengthen education and supervision,so that the catering industry and the supervision department can work together to build food safety.
