摘  要:木耳是一种营养丰富的可食用菌,为了延长货架期,常将木耳干燥保存。目前,国内干燥木耳的方式主要是自然日晒、人工烘干和热风干燥。自然日晒和人工烘干时间久、工作量大,热风干燥则容易干燥不均匀。运用MEMD-M-V-6型真空微波干燥箱对广西本地产新鲜黑木耳进行干燥试验,结果表明,在不同干燥功率和真空度下,最适合木耳干燥的功率是3 kW,真空度为0.075~0.08 MPa,这样干燥的木耳能保证质量达标且干燥均匀,不会有膨化现象发生;使用真空微波干燥木耳,时间相比于其他干燥方式大大缩短,给工厂化大批量进行木耳真空微波干燥提供参考。Auricularia is a kind of edible fungus with rich nutrition. At present,most of the drying methods of Auricularia in China are natural sunlight, artificial drying and hot air drying. Natural sun exposure and manual drying take a long time,which consumes labor. Hot air drying is easy to dry unevenly. In this paper,MEMD-M-V-6 vacuum microwave drying oven was used to dry fresh Auricularia auricula in Guangxi. under different drying power and vacuum degree, the test results showed that the most suitable power for Auricularia auricula drying was 3 kW,and the vacuum degree should be 0.075~0.08 MPa,so that the dried Auricularia auricula could meet the quality standard and be dried uniformly without puffing. Compared with other drying methods,the time of vacuum microwave drying of Auricularia auricula was greatly shortened,which provided reference for industrial vacuum microwave drying of Auricularia auricula in large quantities.
