摘  要:探索小曲清香型固态白酒蒸馏器及其附件尺寸结构包括甑桶、甑盖、筛板(篦子)、甑底蒸汽分布器、加热方式等对蒸馏效率及酒质的影响。研究表明,综合蒸馏效率及酒质:上直筒甑>花盆甑(上大下小)>倒花盆甑(上小下大)。120 cm甑高为蒸馏效率最佳甑高,小于120 cm蒸馏效率与甑高成正比,大于120 cm蒸馏效率与甑高成反比,高径比0.8酒甑相对较优,高径比过大或过小均不利于蒸馏效率的提升,蒸馏效率并非越高酒质越好也并非越低酒质越好,需要一个平衡。直接加热优于间接加热,固态蒸馏甑盖空间越小越好。锥形筛板(篦子)优于平形筛板(篦子),其中倾角10°~15°锥形筛板(篦子)蒸馏效率最优。Taking the distiller and its accessories of Xiaoqu Qingxiang Baijiu as the research object,we explored the influence of the size and structure of the steamer,the steamer cover,the sieve plate(grate),the steam distributor and the heating mode on the distillation efficiency and liquor quality.The results showed that the comprehensive distillation efficiency and liquor quality were as follows:straight steamer>flowerpot steamer(small end down)>inverted flowerpot steamer(big end down).120 cm was the best steamer height.The distillation efficiency was proportionate to the steamer height when the steamer height was less than 120 cm,and the distillation efficiency was inversely proportional to the steamer height when the steamer height was over 120 cm.The best height-diameter ratio was 0.8.Too large or too small height-diameter ratio was not conducive to the improvement of distillation efficiency.There was a balance between the distillation efficiency and the liquor quality.Direct heating was better than indirect heating.The smaller the space under the steamer cover,the better.The conical sieve plate(grate)was better than the flat sieve plate(grate),and the conical sieve plate with an inclination angle of 10°to 15°had the best distillation efficiency.
