摘　　要：中国白酒不仅是我国特有的酒种,更是世界六大著名蒸馏酒之一,蒸酒作为白酒生产工艺中的一个环节,其蒸馏装置对提高白酒品质及产量具有重要意义。该文从以下几个方面对中国白酒产业蒸馏装置的发展历程及研究现状进行综述,介绍了传统的天锅甑、传统蒸馏甑桶的结构及优缺点,机械化蒸馏甑桶在传统蒸馏甑桶基础上的改进与完善。最后,对连续化蒸馏装置的类型进行了总结,并分析了不同连续化蒸馏装置的主体结构以及各自的优缺点,以期对中国白酒产业蒸馏装置的传承与创新提供一定的借鉴与参考。Baijiu(Chinese liquor)is not only a unique kind of liquor in China,but also one of the six famous distilled liquor in the world.Distillation,as a link in the production process of Baijiu,the distillation device is of great significance for improving Baijiu quality and yield.The development process and research status of distillation device in Baijiu industry were summarized from the following aspects:the structure,advantages,and disadvantages of the traditional Tianguo distiller,traditional distillation barrel,and the improvement and perfection of the mechanized distillation barrel on the basis of the traditional distillation barrel were introduced.Finally,the types of continuous distillation devices were summarized,and the main structure of different continuous distillation devices and their respective advantages and disadvantages were analyzed,in order to provide some reference for the inheritance and innovation of the distillation devices in Chinese Baijiu industry.
