摘  要:目的建立超高效液相色谱-串联质谱法同时测定小麦粉及其制品中脱氧雪腐镰刀菌烯醇(Deoxynivalenol,DON)及其衍生物(3-AC-DON,15-AC-DON)的方法,初步了解本省小麦粉及其制品中DON及其衍生物的污染状况,为相关部门制定政策及加强监管提供科学依据。方法采集2019年—2020年河南省18地市的小麦粉、馒头、方便面、生干面条及生湿面条等5个类别的小麦粉及其制品共计1118份,样品经乙腈-水-甲酸(70∶29∶1,体积比)溶液提取,纯水稀释,离心过滤后、上清液采用13C同位素标记,电喷雾负离子/多反应监测模式,对DON、3-AC-DON和15-AC-DON的含量同时测定,结果采用SPSS 17.0软件进行统计处理,并根据《食品安全国家标准食品中真菌毒素限量》(GB 2761—2017)对测定结果评价分析。结果1118份样品中,DON检出率较高,检出率为80.1%,3-ACDON与15-AC-DON污染水平较低。DON污染情况以方便面和生干面条较为严重,其检测均值、中位值、检出率和超标率均高于其他面制品。结论河南省小麦粉及其制品中,DON污染较为普遍,其中方便面和生干面条的污染尤为严重,其污染状况应引起关注。Objective An ultra-performance liquid chromatography-triple quadrupole tandem mass spectrometric(UPLC-MS/MS)method was established for simultaneous determination of deoxynivalenol(DON)and derivatives in wheat flour and its products,to preliminarily investigate the contamination status of DON and derivatives in Henan Province and provide scientific basis for formulation of policy and government surveillance.Methods A total of 1118 samples were collected randomly from18 cities of Henan during 2019 and 2020,including wheat flour,steamed bread,instant noodles,dry noodles and wet noodles.Samples were extracted by acetonitrile-water-formic(70∶29∶1,V/V/V)solution,then diluted by pure water.After centrifuged and filtered,the supernatant was labeled with13C isotope and determined by electrospray negative ion/multiple reaction monitoring mode(ESI-/MRM).The contents of DON,3-AC-DON and 15-AC-DON were determined simultaneously,and the results were statistically processed by SPSS 17.0 software,then evaluated and analyzed according to GB 2761-2017 National Food Safety Standard Limit of Mycotoxins in Food.Results Among 1118 samples,DON had a highest detection rate(80.1%),however the pollution levels of 3-AC-DON and 15-AC-DON were very low.The average value,median value,rates of detection and exceeding of DON pollution in instant noodles and dry noodles were higher than other flour products.Conclusion DON pollution is common in wheat flour and its products in Henan Province,especially in instant noodles and dried noodles,which should be paid attention to.
