摘　　要：以玫瑰香葡萄醋为原料,添加玫瑰花浸提液、蜂蜜、柠檬酸等3种辅料,经过调配制成营养丰富、风味独特的玫瑰香葡萄醋饮料。该饮品兼具水果和食醋的营养,是集保健、食疗等功能为一体的新型饮品。通过单因素试验和正交试验,确定该饮料的最佳配方为玫瑰花浸提液10 mL,玫瑰香葡萄醋5 mL,蜂蜜14 mL,柠檬酸0.3 mL(总体积50 mL)。Muscat grape vinegar was used as raw material,and three auxiliary materials including rose extract,honey and citric acid were added.After blending,muscat grape vinegar beverage with rich nutrition and unique flavor was prepared.The drink has the nutrition of fruit and vinegar,and is a new drink with the functions of health care and diet therapy.Through single factor test and orthogonal test,the optimum formula of the beverage was determined as follows:rose extract 10 mL,muscat grape vinegar 5 mL,honey 14 mL,citric acid 0.3 mL(total volume 50 mL).
