摘 要:农业废弃物综合利用,是当前世界各国亟待解决的问题。在花生加工生产的过程中,产生了大量的花生壳,但是目前花生壳绝大部分被当做废弃物或是燃料,只有少部分应用于饲料、蘑菇基质等少数利润空间较低的方面,价格低廉,利用率较低,没有做到真正的物尽其用,造成了较大的资源浪费。而花生壳中膳食纤维含量较高,对花生壳膳食纤维的深入研究,可以为改善花生壳资源浪费的现状提供有效方法。本文从花生壳膳食纤维提取、分离提纯、脱色、改性这几个方面对花生壳膳食纤维的研究进展进行了综述。The comprehensive utilization of agricultural waste was an urgent problem in the world. In the process of peanut processing and production, a large number of peanut shells were produced, but most of the peanut shells were treated as waste or the fuel, while only a small amount was processed as feed or substrate for mushrooms, with low in price and utilization rate. Therefore, the peanuts were not fully used, causing waste of resources. However, the content of dietary fiber in peanut shell was high. The in-depth study of dietary fiber in peanut shell could provide an effective method to reduce the resource waste of peanut shells. In this paper, the studies concerning peanut shell dietary fibers were reviewed from the aspects of extraction, separation and purification, decolonization and modification.
