清香型白酒机械化酿造车间设备布局与应用

摘　　要：机械化设备在白酒酿造行业的应用,有利于减轻劳动强度,提高劳动效率,促进白酒行业实现酿造生产的清洁化和节能减排。当前,小曲清香型白酒酿造的机械化程度较高,基本实现了酿酒全过程的机械化。依据白酒酿造过程的分工段分流程作业,开发与生产应用的全自动化清香型白酒酿造生产设备,基本实现了整个酿酒过程的全自动化,进一步确保了各工艺环节的稳定有序,稳步提高了原酒的品质与产量。本文结合小曲清香型白酒的车间设备布局及生产实践,从清香型白酒机械化酿造车间的工艺流程、设备布局、关键工序等方面,分析与探讨了机械化酿酒的主要设备及其特点,以期为白酒酿造的机械化发展提供参考。The application of mechanized equipment in the production of Baijiu can reduce the labor intensity and improve the labor efficiency,and is conducive to the realization of clean production,energy saving and emission reduction.At present,the mechaniza-tion level of the production of Xiaoqu Qingxiang Baijiu is high.According to the requirements of different production processes of Baijiu,the fully automatic equipment for Baijiu production has been developed and applied,which ensures the stability of each pro-duction process,and improves the quality and yield of the crude liquor.This paper introduces the technological processes,equipment layout and key links of the mechanized workshop of Qingxiang Baijiu,so as to provide reference for the mechanized development of Baijiu production.
