摘  要:水产品营养价值极高,深受消费者青睐,但其内源酶活性强,且携带有大量的微生物,易发生腐败变质,极大地影响了水产品的流通和营销。采用水产品物理保鲜技术,能够在很大程度上保持水产品原有的鲜度品质,减少其营养损失,满足消费者的需求。超高压、电子束辐照、微冻、流态冰和低温等离子体活化水等物理保鲜技术由于对水产品的副作用小,且能够高效减菌和抑制酶活,已被广泛应用于水产品保鲜。对近年来水产品物理保鲜技术的研究成果及特点进行综述,提出水产品物理保鲜技术的发展趋势和建议,为水产品物理保鲜技术的进一步改进提供参考。Aquatic products have extremely high nutritional value and are favored by consumers.However,due to the strong endogenous enzyme activity and the large number of microorganisms in aquatic products,they are very prone to spoilage and deterioration,which greatly affects the circulation and marketing of aquatic products.The use of aquatic product fresh-keeping technology can maintain the original freshness quality of aquatic products to a large extent,reduce the nutritional loss of aquatic products,and meet the needs of consumers.Physical preservation technologies such as ultra-high pressure,electron beam irradiation,micro-freezing,ice slurry,and low-temperature plasma activated water have been widely used in the preservation of aquatic products due to their small side effects on aquatic products,high efficiency in reducing bacteria and inhibiting enzyme activity.By reviewing the research results and characteristics of physical fresh-keeping technology of aquatic products in recent years,the future development trend and suggestions of physical preservation technology of aquatic products are put forward,which points out the direction for further improvement of physical preservation technology of aquatic products.
