摘  要:食品加工技术对于保持食品营养价值,加强食品的安全性,确保食品品质具有重要的意义。因此,食品加工技术得到了社会广泛关注。当前,食品加工技术发展水平处于不断提升状态。超高压技术属于一种先进的食品加工技术,常被应用在食品加工中。基于此,本文重点分析了超高压技术基本原理、作用机理以及特点,探究了超高压技术在食品加工中的具体应用,旨在为超高压技术在食品加工中的科学、有效应用提供可靠的指导。Food processing technology plays an important role in maintaining food nutritional value,strengthening food safety and ensuring food quality.Therefore,food processing technology has been widely concerned by the society.At present,the development level of food processing technology is constantly improving.Ultra-high pressure technology is an advanced food processing technology,which is often used in food processing.Based on this,this paper focuses on the analysis of the basic principle,mechanism of action and characteristics of ultra-high pressure technology,and explores the specific application of ultra-high pressure technology in food processing,aiming to provide reliable guidance for the scientific and effective application of ultra-high pressure technology in food processing.
