摘　　要：利用生物反应器进行浓香型白酒的发酵,同时采取不同的控温措施进行对比研究。研究结果表明,采用窖泥控制温度的效果最好,出酒率和酒质均最佳。The bioreactor is used in the production of Nongxiang Baijiu,and different temperature control measures are compared and analyzed.The results show that,using the pit mud to control the temperature is the best,with the highest liquor yield and liquor quality.
