摘　　要：利用山梨酸钾与双氧水-硫酸溶液反应后形成丙二醛,丙二醛与硫代巴比妥酸生成红色化合物三甲川(3,5,5-三甲基恶唑-2,4-二酮)的原理,以显色的深浅与山梨酸钾的含量在一定范围内成正比为基础,尝试开发乳酸菌制品山梨酸钾快速检测试剂盒。初步确定的试盒为塑料卡,试纸为硝酸纤维素膜;该试纸对标准山梨酸钾水溶液的检出限为1.0 g/L,对乳酸菌中山梨酸钾的低检出限也为1.0 g/L。该试剂盒具有体积小、便于携带、检测方便和成本低廉等特点,具有广泛的应用价值和市场开发前景。The test based on the sorbic acid potassium react to the hydrogen peroxide oxidation,and form malondialdehyde,after that the malondialdehyde would combinate with glucosinolates barbituric acid(associates)and produce trimethine(3,5,5-trimethyloxazole trimethine,3,5,5-trimethyloxazole-2,4-dione),which is red compounds.Acording to the depth of the color is proportional to the content of potassium sorbate within a certain range.The paper box for rapid detection of potassium sorbate of lactic acid bacteria was developed.The preliminarily determined test box is plastic card and the test paper is nitrocellulose film.The detection limit of the paper for standard potassium sorbate aqueous solution is 1.0 g/L,and the detection limit of standard potassium sorbate solution in lactic acid bacteria is 1.0 g/L.The test paper box has the characteristics of small size,easy to carry,convenient detection and low cost,which has a wide range of application value and market development prospects.
