摘 要:作为一种生理菌群,益生菌对人体肠道有诸多益处,对高血压、糖尿病、高血脂以及癌症等多种疾病都有预防作用。同时,益生菌还具有良好的营养保健功能,因而被人们广泛应用于食品领域中,如功能性食品、食品添加剂等,深受广大消费者的喜爱。基于此,本文阐述了益生菌的定义和种类,分析了益生菌的营养保健作用,包括抑制病原菌生长和繁殖,优化肠道菌群结构;提高机体免疫力,刺激免疫应答;降低肿瘤发病率,抑制癌细胞生长;延缓机体衰老,清除机体自由基;改善机体的血脂情况,降低胆固醇含量等,并对益生菌在功能食品中的应用进行了论述,希望能进一步拓展益生菌的应用范围。As a kind of physiological flora,probiotics have many benefits to human intestines,and can prevent many diseases such as hypertension,diabetes,hyperlipidemia,cancer and so on.At the same time,probiotics also have good nutritional and health care functions,so they are widely used in food field,such as functional food,food additives and so on.Based on this,this paper expounds the definition and types of probiotics,and analyzes the nutritional and health functions of probiotics,including inhibiting the growth and reproduction of pathogenic bacteria,optimizing the structure of intestinal flora;improving immunity and stimulating immune response;reducing the incidence rate of cancer and inhibiting the growth of cancer cells;delaying the aging of the body and removing the free radicals;improving the body’s blood lipids and reducing cholesterol content.This paper also discusses the application of probiotics in functional foods,hoping to further expand the application scope of probiotics.
