摘  要:膜过滤技术具有高效、环保、操作方便、易放大、成本相对低等特点,对提升饮料酒酒质方面有一定作用。该文对膜过滤技术的分类与作用机理,以及在白酒、葡萄酒、啤酒、黄酒4种饮料酒中的应用进行了综述;基于目前膜过滤技术在酿酒行业的应用现状,提出存在的问题以及解决方案,希望提高膜过滤技术在酿酒行业乃至食品行业中的应用潜力。Membrane filtration technology has a certain effect on improving the quality of alcoholic beverages with the characteristics of high efficiency,environmental protection,convenient operation,easy amplification,and relatively low cost.The classification and mechanism of membrane filtration technology and the application in four types of alcoholic beverages,Baijiu(Chinese liquor),wine,beer andHuangjiu(Chinese rice wine)were reviewed.Based on the current application status of membrane filtration technology in the brewing industry,the existing problems and solutions were proposed,expecting to improve the application potential of membrane filtration technology in the alcoholic beverages industry and even in the food industry.
