摘  要:茶酒,按加工工艺可分为配制型、发酵型、汽酒型。配制型是用茶汤与成品酒等原料进行勾兑而成;铁观音具有汤色金黄、香高持久,可作为天然的食品着色剂和调味剂。为了得到一款色泽橙黄、茶香显著的配制型铁观音茶酒,研究通过单因素和正交优化试验得到茶酒的最佳配方为铁观音添加量2.5 g、高粱酒11.0 mL、柠檬糖5.0 g,经配制得铁观音茶酒的感官评分为92.0,糖度4.9%,酒精度4.8%vol;铁观音茶酒含有酯类、萜类、芳烃、醇类、醛类、酮类、酚类、胺类、烃类、卤代烃、含氮化合物、含硫化合物、杂环化合物、其他类等挥发成分;该茶酒口感最佳,酒精度和糖度适中,色泽橙黄,透明清亮,茶香与酒香纯正浓郁,口感润滑,甜度适宜,茶味和酒味协调性好。According to the processing technology,tea wine can be divided into preparation type,fermentation type and sparkling wine type;Tie Guanyin has golden color,high fragrance and long-lasting.It can be used as a natural food colorant and seasoning.In order to obtain a kind of Tie Guanyin tea wine with orange color and significant tea aroma,the optimum formula of Tie Guanyin tea wine was obtained by single factor and orthogonal test,which was 2.5g Tie Guanyin,11.0mL sorghum wine and 5.0g lemon syrup.The sensory score of Tie Guanyin tea wine was 92.0,alcohol content was 4.8% vol and sugar content was 4.9%;Tie Guanyin tea wine contains volatile components such as esters,terpenes,aromatics,alcohols,aldehydes,ketones,phenols,amines,hydrocarbons,halogenated hydrocarbons,nitrogen-containing compounds,sulfur-containing compounds,heterocyclic compounds and others;The tea wine has the best taste,moderate alcohol and sugar content,orange color,transparent and clear,pure and rich tea and wine aroma,smooth taste,appropriate sweetness,good coordination of tea and wine flavor.
