四种市售花草茶抗氧化活性的评价

摘　　要：研究市场上同一厂家的茉莉花茶、玫瑰花茶、金银花茶和贡菊花茶的主要品质化学成分质量浓度及其抗氧化活性.结果表明:总糖质量浓度,贡菊花茶>金银花茶≈茉莉花茶>玫瑰花茶;总蛋白质量浓度,玫瑰花茶≈金银花茶>茉莉花茶>贡菊花茶;游离氨基酸总质量浓度,玫瑰花茶>贡菊花茶>金银花茶≈茉莉花茶;茶多酚质量浓度,玫瑰花茶>金银花茶>茉莉花茶>贡菊花茶;总黄酮质量浓度,玫瑰花茶>金银花茶=贡菊花茶>茉莉花茶;儿茶素类化合物总质量浓度,玫瑰花茶>茉莉花茶>贡菊花茶>金银花茶;抗氧化活性,玫瑰花茶>金银花茶>茉莉花茶>贡菊花茶.茉莉花茶中EGCG,贡菊花茶中+C质量浓度分别与其抗氧化活性显著相关.4种花草茶中发挥抗氧化活性的主要物质基础不完全相同.To study the concentration and antioxidant activity of main quality chemical components of jasmine tea,rose tea,honeysuckle tea and chrysanthemum tea from the same manufacturer in the market.The results showed that the order of total sugar concentration was chrysanthemum tea>honeysuckle tea≈jasmine tea>rose tea;the order of total protein concentration was rose tea≈honeysuckle tea>jasmine tea>chrysanthemum tea;the order of total free amino acids concentration was rose tea>chrysanthemum tea>honeysuckle tea≈jasmine tea;the order of tea polyphenols concentration was rose tea>honeysuckle tea>jasmine tea>chrysanthemum tea;the order of total flavonoids concentration was rose tea>honeysuckle tea=chrysanthemum tea>jasmine tea;the order of total catechins concentration was rose tea>jasmine tea>chrysanthemum tea>honeysuckle tea;and the order of antioxidant activity was rose tea>honeysuckle tea>jasmine tea>chrysanthemum tea.The concentration of EGCG in jasmine tea and+C in chrysanthemum tea were significantly correlated with their antioxidant activity.The main substance base of antioxidant activity in the four herbal teas were not completely the same.
