摘  要:建立一种超高效液相色谱-三重四极杆串联质谱法,同时检测饮料中的7种合成甜味剂(甜蜜素、糖精钠、安赛蜜、阿斯巴甜、阿力甜、纽甜和三氯蔗糖)的含量。将无蛋白饮料样品进行脱气,用甲醇-水(1∶1,V/V)溶液稀释;高蛋白饮料用甲醇-水(1∶1,V/V)溶液超声提取,用10%亚铁氰化钾和20%乙酸锌除去蛋白质,稀释过滤制成供试品溶液。用C_(18)柱分离,以0.1%甲酸-5 mmol甲酸铵溶液/乙腈系统为流动相,经超高效液相色谱分离,电喷雾串联四极杆质谱进行检测。7种甜味剂在10 min内有效分离,检出限均为0.125 μg·kg^(-1)(三氯蔗糖为0.250 μg·kg^(-1))。在线性范围(10-50 μg·L^(-1))内,线性相关系数>0.995,3个添加水平的平均回收率为78.2%-102.5%,相对标准偏差为2.31%-10.70%。本方法简单高效、灵敏度高,可以满足饮料相关甜味剂的检测。An ultra-high performance liquid chromatography-triple quadrupole tandem mass spectrometry method for simultaneous determination of 7 synthetic sweeteners (cyclamate,sodium saccharin,acesulfame,aspartame,alite,neotame,sucralose) in beverages was developed.The protein free beverage samples were degassed and diluted with methanol water (1∶1,V/V) solution;the high protein beverage was extracted with methanol water (1∶1,V/V) solution by ultrasound.The protein was removed with 10% potassium ferrocyanide and 20% zinc acetate,and diluted and filtered to prepare the test solution.Separated by C_(18) column,using 0.1% formic acid-5 mmol ammonium formate solution / acetonitrile system as mobile phase,separated by ultra-high performance liquid chromatography,and detected by electrospray spray tandem quadrupole mass spectrometry.The seven sweeteners were separated effectively within 10 min,and the detection limit was 0.125 μg·kg^(-1)(sucralose 0.250 μg·kg^(-1)).In the linear range (10-50 μg·L^(-1)),the linear correlation coefficient is >0.995,the average recovery of the three additive levels is 78.2%-102.5%,and the relative standard deviation is 2.31%-10.70%.The method is simple,efficient and sensitive,and can meet the detection of beverage related sweeteners.
